Yummy Frittata

Pre-heat the oven to 350°F. Beat 2-3 eggs per person (e.g., 4 eggs for 2 people). Add any of your favorite vegetables; for this recipe, tomatoes, broccoli, spinach, and olives were used. Mix all ingredients together with your favorite spices; salt, pepper, paprika, cumin, coriander, basil, parsley, and oregano were used here. Then, pour the mixture into an oven-safe skillet (like a cast iron) and cook on the stovetop until the edges begin to firm. Transfer the skillet to the pre-heated oven and bake at 350°F for 10-14 minutes, or until the middle is completely firm. Enjoy!
