In a bowl mix together potatoes (diced), olive oil, salt, and ground black pepper. Add butter to cast iron & let it melt. Add potato mixture & cover with a lid to cook until brown and tender; stirring occasionally (10-15 mins). Add garlic right before potatoes are done cooking along with cooked bacon and mix it well. Once the potatoes & bacon are ready, make four holes in the mixture; break eggs into holes. Cover with a lid until egg whites are completely set and yolks begin to thicken (runny but not hard). Once eggs are done, sprinkle cheese on top & let it melt for a couple of minutes. Serve with sliced avocado and green onion garnish on top!
