Kaiserschmarrn

Whisk the egg yolks with the milk and vanilla, then mix in the flour, sugar and salt. In a separate bowl, whip the egg whites until fluffy and gently fold them into the batter. Melt butter in a large skillet and pour in the batter. Cook until golden underneath and mostly set, then flip. Once cooked through, tear it into bite-sized pieces right in the pan. Add a little more butter and sugar and toss until the edges are golden and slightly caramelized. Finish with LOTS of powdered sugar and serve warm with berry compote or applesauce.
