A refreshing frozen fruit tart featuring a graham cracker crust, a creamy, sweet filling, and a vibrant topping of fresh and frozen berries, kiwi, and strawberries. Perfect for an Easter celebration or any special occasion.
Preheat oven to 350°F. Mix melted butter and graham cracker crumbs until combined. Press mixture into a tart pan and bake for 10-12 minutes or until golden brown, or freeze the crust if preferred. Using a whisk attachment, beat cream cheese until smooth, then add powdered sugar, heavy cream, and vanilla extract, and mix well. Pour the cream cheese mixture into the prepared crust and spread evenly. Layer fresh fruit (kiwis and halved strawberries) starting from the outside and working your way in, then top off the center with frozen mixed berries. Freeze the tart for a few hours or until set. Optional: decorate with melted chocolate at the edge of the pie. Serve and enjoy.
